High West High Country is an American single malt made in copper pot stills in the Wasatch Mountains of Utah, bottled at 88 proof in a 750ml bottle. It is distilled on the grain, with the grain left in during fermentation and distillation.
The whiskey is a blend of single malts aged 2 to 9 years in new and used charred American oak, including ex-Bourbon and ex-Rye barrels, with a portion finished in French oak port barrels. The mash bill combines three malted barley recipes, one of them peated Scottish malt.
The nose brings roasted macadamia, dried cherry and soft wood smoke. The palate offers smoked pear, baked apple and dark chocolate, and the finish carries honeycomb and cocoa nibs.
