Highland Park stands in Kirkwall on Orkney, where it was founded in 1798, and it is the northernmost distillery in Scotland. The island's peat is notably different from Islay peat, and the often-mentioned heather sweetness is among the whisky's basic flavours.
Its water comes from a spring lower down the slope, Cattie Maggie's Quarry.
