A Highland Park single malt distilled in 2008 and bottled by Murray McDavid at 54.1%, in a 70cl bottle. It was matured in bourbon casks. Highland Park sits in Kirkwall on Orkney and was founded in 1798, making it the northernmost distillery in Scotland. Orkney peat is quite unlike Islay peat, and a heather-like sweetness is among the whisky's basic aromas. Its water comes from a spring at Cattie Maggie's Quarry.
