A 16-year-old Highland Park single malt from Orkney, bottled at 48% in a 70cl bottle. It belongs to the Between You & I series and is a collaboration with the Swedish chef Björn Frantzén.
The whisky matured in untreated Swedish oak casks, European and American oak sherry casks and ex-bourbon casks. Highland Park used Swedish oak in this way for the first time, and it brings a pronounced spiciness.
The nose is layered, with vanilla, orange and citrus, then marzipan, nutmeg and spiced cake. On the palate honey and vanilla sweetness meet citrus, dried fruit and light smoke. The finish is long and warming.
