This is a single malt from Highland Park, bottled by Duncan Taylor as The Octave, with 2003 in its name. It is bottled at 54.1% in a 70cl bottle. Highland Park was founded in 1798 in Kirkwall on Orkney and is the northernmost distillery in Scotland. Orkney peat differs considerably from Islay peat, and a much-quoted heather sweetness is one of the whisky's basic flavours. The water comes from a spring lying lower down, at Cattie Maggie's Quarry.
