This is a 31 year old single cask Highland Park from Orkney, distilled in 1987 and bottled in 2019. It matured in a first fill sherry cask and was bottled at a cask strength of 47.1% ABV, giving 185 bottles in 75cl.
The notes point to slightly more peat than is usual for the distillery, with heather honey, tannin and a pronounced saltiness. The palate is silky, with smoke, barley sugar, dark liquorice and exotic fruit, while spice, molasses and oak run alongside long smoke.
