Hillrock Solera Aged Bourbon with a Cabernet Sauvignon finish is made at Hillrock Estate Distillery in Ancram, in New York's Hudson Valley, and bottled at 41.3% ABV in a 750ml bottle. It begins with the distillery's estate-grown bourbon, blended with a seed bourbon matured for years in a 20 year old Oloroso sherry solera cask.
The whiskey is then finished in Napa Valley Cabernet Sauvignon wine casks. Hillrock grows its own grain on site and was founded by Jeffrey Baker with the late Dave Pickerell.
Copper-amber with slight red hues, it has a nose of caramel, vanilla, cherry, blackberry and citrus. The palate brings vanilla, toffee and French oak with black cherry, currant and violet. The finish is long and vanilla-led, with cherry and cabernet.
