Ambir is the third single malt release from Holyrood Distillery in Edinburgh. It was matured in first-fill bourbon barrels and Oloroso sherry casks, and bottled at 49.8% without chill filtration or added colouring.
The nose offers caramel fudge, demerara sugar and Scottish tablet, with soft vanilla and buttery pastry. On the palate there are ripe red fruits, vanilla cream and lightly toasted cornflakes, with a velvety texture. The finish carries biscuit sweetness and gentle vanilla, ending with a subtle savoury edge.
