Ambir is a Lowland single malt from Holyrood Distillery in Edinburgh, named after the Scots word for amber. It is built on seven sweet malts and ten fruity yeasts, an approach drawn from the brewing heritage of the city.
It matured in first-fill bourbon barrels (89.7%) and Oloroso sherry casks (10.3%), and is bottled at 49.8% ABV in a 70cl bottle, non-chill-filtered and of natural colour.
The nose is caramel, creamy fudge, demerara sugar and Scottish tablet. The palate brings red fruit, vanilla and cornflakes. The finish has biscuity notes and a velvety texture, with a hint of savoury at the end.
