Ambir is a single malt from Holyrood Distillery in Edinburgh, the distillery's third release. It was bottled in 2024 at 49.8%, in a 70cl bottle.
The whisky matured mostly in first fill bourbon casks, with a smaller share in ex-Oloroso sherry casks. Several malt and yeast varieties went into the spirit.
The nose brings cherries, fudge, malt, caramel and chocolate. The palate is light and creamy, with raspberry, lemon, vanilla and shortbread. The finish is fairly long, with more fruit and a pinch of pepper.
