This is a single malt from Holyrood, part of the distillery's Noir trilogy, in which French wine yeast is paired with Scottish malt. Holyrood used Pinnacle M and Maurivin B yeasts, and matured the whisky in bourbon casks and Burgundy barriques. It is described as a balance of sweet and savoury, with digestive biscuits and raspberry jam followed by pastry cases filled with pomegranate.
