Holyrood Noir - Burgundy Yeast (70cl, 47.4%)

Holyrood Noir Burgundy Yeast is a single malt from the Holyrood Distillery in Edinburgh's Lowlands, in a 70cl bottle at 47.4% ABV. It is made from East Lothian pot still malt, Pinnacle M and Maurivin B wine yeast, and matured in ex-bourbon casks and Burgundy barriques. It is non-chill-filtered, with no added colouring, and was bottled in 2025. Holyrood opened in 2019 as the first single malt distillery in central Edinburgh since 1925, and works with yeast strains from brewing, wine, sake and champagne production. The nose brings pomegranate, blackcurrant and candy floss. On the palate come raspberry jam on toast, brandy snap, cranachan, vanilla and malted biscuit. The long finish moves from sweet to malty.
