Holyrood Noir Bordeaux Yeast is a single malt bottled at 47.1%, part of the Noir trilogy, which pairs French wine yeast with Scottish malt. It is made from East Lothian pot still malt fermented with Pinnacle M and BP725 yeast, and matured in ex-bourbon casks and Bordeaux barriques.
The nose is sweet and jammy, with strawberry, pomegranate and blackcurrant, lifted by lemon and cranberry. Cherries, red apple and raspberry lead on the palate, with cinnamon, clove, toffee and orange cake. The finish is medium to short, with toffee and a drying, warm oak.
