This is a single malt from Holyrood in Edinburgh, part of the NOIR Trilogy, which pairs French wine yeast with Scottish malt. It is bottled at 47.4% ABV.
The spirit is East Lothian pot still malt, fermented with Pinnacle M and Maurivin B yeasts and matured in ex-bourbon barrels and Burgundy barriques.
Tasting notes describe a nose of pomegranate, candyfloss and dark and black berries, with a little cinnamon and vanilla. On the palate come raspberry jam on toast, digestive biscuits, brandy snaps and red fruit over a malty texture. The finish is medium to long, starting with lingering berry sweetness and ending in malty, oaky warmth.
