Smoulder is a peated single malt from Holyrood, an Edinburgh distillery founded in 2019. It is made from 100% malted barley. This 2023 bottling is non-chill-filtered and has no added colour. The nose is delicate and floral, with ripe pear and warm pastry under a little dry wood smoke. On the palate, dense earthiness meets grapefruit and green apple, with ginger and pepper adding spice and a mild mocha note. The finish is long, with roasted hazelnuts and a lingering smokiness.
