Hyde No.12 Bourbon & Sherry Cask is a single pot still Irish whiskey from Hyde Whiskey of Skibbereen in West Cork. This 1893 Commemorative Edition is named after Douglas Hyde, the first president of Ireland, who married Lucy Kurtz in 1893.
It was triple distilled at Cooley in traditional copper stills from malted and unmalted Irish barley and oats. It was then aged in heavily charred ex-bourbon alligator casks and ex-Oloroso sherry casks. Bottled at 46%, it is non-chill-filtered and uncoloured, in an edition of 5,000 bottles.
The nose is fruity and sweet, with raisins, spice, honey and oak. The palate is creamy and spicy, with vanilla, cinnamon, ginger and honeyed sweetness. The finish is lingering, sweet and spicy.
