Inniskillin Cabernet Franc Icewine is a VQA Canadian icewine from the Niagara Peninsula in Ontario, made from 100% Cabernet Franc and sold in a 37.5cl bottle at 9.5% vol.
The grapes are left on the vine until the temperature falls to at least -10°C, then picked and pressed straight away. With no skin contact during fermentation, the ruby-copper colour comes from the pressing alone.
The nose shows rhubarb, raspberry, candied apricot and sweet tobacco, with honey and caramel beneath. The palate is rich and viscous, with strawberry-rhubarb, blueberry, blackberry jam and guava, kept fresh by bright acidity. The finish is long, with honeyed warmth and a faint tobacco note.
