Inniskillin Vidal Icewine (37.5cl, 9.5%)

Inniskillin Vidal Icewine is a Canadian dessert wine made from Vidal grapes from the Brae Burn Vineyard in the Niagara Peninsula, in a 37.5cl bottle at 9.5% vol. The grapes stay on the vine into winter until temperatures fall to at least -10°C, then are picked by hand and pressed while frozen. The juice ferments slowly at around 15°C, which keeps the concentrated sugars and bright acidity. The nose is ripe peach and apricot with marmalade, candied pineapple and a little lychee and honey. The palate is intensely sweet, with mango, tangerine and nectarine lifted by bold acidity. The finish is long and honeyed, with dried apricot and kaffir lime.
