Inniskillin Sparkling Vidal Icewine 2022 (37.5cl, 9.5%)

Inniskillin Sparkling Vidal Icewine 2022 is a sparkling icewine in a 37.5cl bottle, at 9.5% ABV. Inniskillin was founded in 1975 by Karl J. Kaiser and Donald Ziraldo as the first Canadian estate winery since Prohibition. Picking for the 2022 harvest began in the third week of December at around -10°C and finished on 5 February, over four pickings. The frozen grapes gave juice at 37.7 brix, which was fermented under pressure in a Charmat tank at an average of 17°C, producing a fully sparkling icewine rather than a still one. The aromas are apricot jam, peach sorbet, nectarine, white peach and pineapple syrup. On the palate, peach and apricot come with ginger, tropical notes and fresh acidity, and the finish is lifted by lemon.
