Isle of Fionia Sjæl PX Cask Finish is an organic Danish single malt from Nyborg Destilleri on Funen, made from organic malted barley and bottled at 46% in a 70cl bottle.
After its first maturation, the whisky is finished in Pedro Ximénez sherry casks, which add dried fruit, dark sweetness and spice.
The nose brings raisins, dried figs, dates, vanilla and caramel. The palate is full and soft, with dark chocolate, dried fruit, honey, oak and warm spices. The finish is long, with sherry, caramel and spice.
