Jacob's Pardon Cask Collective 16 Year Old is an American whiskey from Marc Taub and F. Paul Pacult, released as the Rare Finishes edition of the Cask Collective. It is a 16-year-old light whiskey distilled in Indiana from 99% corn and 1% malted barley, then bottled in Bardstown, Kentucky at 48.25% ABV.
The whiskey was finished in 50-year-old Oloroso sherry casks from Bodegas Williams & Humbert in Jerez, Spain. Forty-eight barrels were selected for the release, and it is non-chill filtered.
The nose brings toasted marshmallow, candied almond and orange marmalade over sherry sweetness. The palate is full-bodied, with toasted nuts, caramel, dark chocolate and a red-fruit Oloroso character. The finish is long, warming and jammy.
