Kanosuke Peated Single Malt Japanese Whisky (70cl, 48%)

This is a limited-edition peated single malt from Kanosuke Distillery in Hioki, Kagoshima, bottled at 48% ABV in a 70cl bottle. It combines the distillery's mellow fruit character with a restrained layer of peat smoke. The whisky is built mainly on peated malt matured in re-charred ex-shochu casks and Bourbon barrels, with whiskies from other cask types added to the final vatting. The nose has blackcurrant, caramel, honey butter and fresh baguette, with a savoury dashi note and soft smoke. The palate brings quince candy, ripe pear and kumquat with smoked bacon, salt candy and roasted soybean. The finish is long, with quince, kumquat peel, gentle salinity and mellow peat smoke.
