Kanosuke – Peated Single Malt Japanese Whisky (70cl, 48%)

This is a limited edition peated single malt from Kanosuke in Japan, bottled at 48% ABV in a 70cl bottle. It is made mainly from peated malts matured in re-charred ex-shochu casks and bourbon barrels, with whiskies from other select casks added to the final blend. The smokiness is gentle, set against juicy fruit and honey. The warehouses catch a cool ocean breeze in winter, which gives a subtle hint of salinity. The nose has blackcurrant, caramel, honey butter, baguette and a gentle bonito dashi. The palate brings quince candy, pear, kumquat compote, smoked bacon and salt candy. The finish is long, with quince and a hint of kumquat peel.
