Kanosuke – Single Malt Peated (70cl, 48%)

Kanosuke Single Malt Peated is a peated Japanese single malt from Kanosuke Distillery in Kagoshima, added to the distillery's Single Malt Kanosuke series as a limited edition. It is bottled at 48% in a 70cl bottle. Fermentation ran twice as long as is usual for Scotch whisky, and the middle cut was lengthened on the three pot stills. The key malt matured in re-charred shochu casks and bourbon barrels, accented with whisky aged six years in Manzanilla sherry casks. The nose shows cassis, caramel, honey butter and a gentle bonito stock note. The palate brings quince candy, pear, kumquat compote, smoked bacon and rock salt candy. The finish is tart quince with faint bitter citrus.
