This is Kilchoman 100% Islay Sherry Cask, a single malt from the Islay distillery, bottled at 50% in a 70cl bottle. Kilchoman opened in 2005 as the first new distillery on Islay in 124 years. It stands on Rockside Farm, a former agricultural estate in the north-west of the island, and is the only Islay distillery that does not sit directly on the sea. The 100% Islay name refers to every ingredient and every stage of production coming from the island. Kilchoman is the only whisky entitled to use it.
