Kilchoman – Genesis Stage 3 (70cl, 49.4%)

Kilchoman Genesis Stage 3 is the third release in the Genesis series and looks at the peating of barley. It combines whisky made from malt from Kilchoman's own maltings, peated to about 20 ppm, with whisky from Port Ellen Maltings malt at 50 ppm. The vatting is 70% bourbon-matured, 25% STR-matured and 5% Oloroso sherry-matured whisky. It was bottled in 2022 at 49.4%, in 3,600 bottles of 70cl, with no chill-filtration and no added colour. The nose combines smoke, sweet malt and vanilla with citrus and a touch of caramel. The palate is creamy, with caramel and toffee alongside herbal notes and liquorice. The fruity finish carries a note of smoked ham.
