Koval Single Barrel Millet Whiskey is distilled in Chicago from a mash bill of 100% organic millet, a gluten-free grain more often used in spirits in Nepal and East Africa than in American distilling.
It is aged in heavily charred new American oak and bottled at 40% ABV (80 proof) as a single barrel whiskey that is soft, clean and fruit-forward.
The nose offers crisp pear, green apple, vanilla and a touch of earthiness. The palate is soft and delicate, with orchard fruit, honey, toasted nuts and vanilla cream. The finish is clean and quick, with lingering sweet fruit and soft oak.
