Koval – Straight Bourbon Single Barrel (47%)

Koval Single Barrel Bourbon is a straight bourbon from Koval, a distillery founded in Chicago in 2008 and described as the city's first since the mid-1800s. It is bottled at 47% ABV. The mash is 51% corn, with millet making up the other 49%. Only the heart of the distillate is used, with no heads or tails, and the bourbon is organic, unfiltered and drawn from a single barrel. Sweet vanilla comes with light char smoke and toasted grains. The mid-palate is soft and sweet, and the finish centres on barrel spices and char smoke.
