Los Siete Misterios Doba-Yej Mezcal (70cl, 43%)

Doba-Yej is a mezcal from Los Siete Misterios, created by brothers Julio and Eduardo Mestre. The name means Espadín in the Zapotec language. It is made from 100% Espadín agave grown in the highlands of Oaxaca. The agaves are hand-harvested, roasted in stone-lined pits, crushed by tahona and fermented naturally in open wooden vats. Unlike some of the brand's clay-distilled mezcals, it is distilled in copper stills. The nose is bright, with citrus, smoked wood, roasted agave and a touch of minerality. The palate is light-bodied, with green apple, sweet agave, gentle pepper and soft smoke. The finish is smooth, with subtle sweetness and lingering smoke.
