Lustau Jarana Fino Sherry (75cl, 15%)

Lustau Jarana is a Fino sherry from the Solera Familiar series, made in Jerez de la Frontera under the Jerez DO entirely from Palomino Fino. It ages biologically under flor in a solera and criaderas system, where the yeast layer limits oxidation and keeps the wine fresh. It is pale straw in colour and intensely dry. The nose is crisp, with green almond, hay, chalky mineral and lemon peel over a hint of olives and brine. The palate is very dry and brisk, with green apple, lemon rind and almond skin on a saline backbone. The finish is clean and lingering, with almond, sea salt and dry citrus pith.
