Macallan – 30 Year Old Double Cask (2021 Release)

A 30 year old Speyside single malt from The Macallan, the 2021 release of its Double Cask. It was matured in a pairing of European and American oak casks that previously held Oloroso sherry. The oak was selected from forests in Spain, Ohio, Missouri and Kentucky, dried in southern Spain and made into casks in Jerez. The casks held sherry for two years before being filled with new make spirit. The whisky then rested for 30 years until it was bottled in 2021. The nose offers honeycomb, toffee, red apple, fig and vanilla pod. On the palate come cinnamon, ginger, Madagascan vanilla, dried fruit and oak, and the finish is sweet oak, soft spice and toffee.
