Macallan – 30 Years Old Ultra Murray McDavid

This is a 30 year old Macallan single malt bottled by Murray McDavid. It began in an American oak ex-bourbon hogshead, then spent seven years in an Oloroso sherry cask. It was finally filled into a PX sherry cask supplied by Ximénez-Spínola, the wood partner of Murray McDavid in Jerez, Spain. The nose is described as fresh honeycomb and sweet toffee, with creamy barley sugars, a hint of fig and some pastry. On the palate come cinnamon and nutmeg, milk chocolate and a suggestion of coffee and ginger biscuits. The finish is generous and leaves a touch of sweet sherry.
