Noah's Mill is a Kentucky straight bourbon, distilled, matured and bottled by Willett Distillery in Bardstown. It is bottled undiluted at 57.15% ABV (114.3 proof), with no added colouring.
The mash bill is 72% corn, 13% rye and 15% barley, and the bourbon matures for at least four years in new charred American oak. Since 2020 it has been made solely from Willett's own distillate.
The nose has brown sugar, toasted oak and vanilla, then honey, dried apricot and a touch of aniseed. The palate brings honey, red apple, dried plums and tobacco. The finish is long, with cinnamon, clove and burnt caramel.
