Noah's Mill Small Batch (70cl, 57.1%)

Noah's Mill Small Batch is a Kentucky straight bourbon from Bardstown, made by Willett Distillery and bottled at 57.15%, or 114.3 proof, in a 70cl bottle. It is not chill-filtered and has no added colour. The mash bill is 72% corn, 13% rye and 15% barley, and the spirit went into the cask at 125 barrel entry proof. The nose offers walnut and dark plum with floral notes and a hint of cinnamon. The palate is full-bodied, with walnut, plum, spice and lavender, and a fine acidity keeps the burnt caramel in balance. The long, warm finish holds caramel and oak, with honey-roasted nuts, green apple and a trailing pepper.
