Ontake First Edition is the first single malt from the Ontake Distillery, which opened in 2019 in Kagoshima Prefecture, Japan. It was bottled in 2023 at 43% ABV in a 70cl bottle, without chill-filtering or added colour.
The whisky was matured entirely in first-fill solera sherry butts. It is made from unpeaked barley malt of the two-row variety, a yeast cultivated by the distillery itself and soft natural water.
On the nose there are baked apple, stewed pear and apricot with citrus and toasted bread. The palate opens dry, then turns full-bodied with fruit cake, vanilla, raisins and figs. The finish is long and smooth, with warming spice and a touch of chocolate.
