Penelope Architect is a straight bourbon bottled at 52% in a 750ml bottle. It is distilled at MGP in Lawrenceburg, Indiana, from a mashbill of 75% corn, 15% wheat, 7% rye and 3% malted barley.
After its initial maturation the bourbon is finished with French oak staves. Each stave is scanned with Oakscan infrared technology from the cooperage Tonnellerie Radoux, so that its tannin and polyphenol content is known before it is chosen.
The nose is butterscotch and maple, with cinnamon bark, vanilla bean and cacao nibs. The palate is creamy, with caramel, crème brûlée and gentle black pepper. The finish is medium to long, with coffee bean, toasted oak and warming cinnamon.
