Rabbit Hole Cavehill Cask Strength is a single barrel Kentucky bourbon from Rabbit Hole Distillery in Louisville, bottled uncut at barrel proof in a 750ml bottle. Each barrel was chosen at peak maturity and bottled without proofing down or blending, so strength varies from barrel to barrel.
The mashbill is 70% corn, 10% malted wheat, 10% malted barley and 10% honey malted barley, which the distillery calls triple malt. It matures in American white oak barrels from Kelvin Cooperage, toasted slowly over a wood fire before charring.
The nose is dark chocolate, cocoa and roasted chestnuts, and the palate moves from espresso to caramel, baked apple and black pepper. The finish is long and warming.
