Rabbit Hole Cavehill is a Kentucky straight bourbon in a 75cl bottle at 47.5% ABV. The mash bill uses four grains: corn, malted barley, honey malted barley and malted wheat.
It is aged in hand-selected American white oak casks from Kelvin Cooperage, toasted slowly over a wood fire and then charred. Each batch is blended from no more than 15 casks.
The nose has dried red fruit, dry oak tannins, raspberry jam and an earthy note. The palate brings spiced oak, milk chocolate, caramel, white pepper and sweet black cherry. The finish is long, with orange peel, honey, sweet lemon cake, creamy chocolate and peppery spice.
