Shizuoka Pot Still K is a single malt from Shizuoka Distillery, founded in 2016, which uses a vintage German mill, local cedar wood washbacks and Japan's only wood-fired still. The whisky is aged in a mix of casks including American oak and Japanese Mizunara oak.
The distillery lies in a region of coastal and mountainous conditions, with cool winters and warm, humid summers.
The nose is fresh and floral, with green apple, citrus peel, light malt, herbal notes and vanilla cream. The palate shows orchard fruits, white grape and soft spice with a light nuttiness, and the finish brings faint oak, lemon zest and floral sweetness.
