This is a single cask Orkney single malt from Highland Park, distilled in 2011 and bottled by Signatory Vintage at 57.1% in a 70cl bottle.
It matured in a first fill Pedro Ximénez butt, a cask that previously held PX sherry. That brings dark fruit, raisins and sweet sherry tones alongside a lightly smoky, maritime character.
The nose offers raisins, plums and dried fruit with dark sherry, honey and soft peat smoke. The palate is full, with dark fruit, chocolate, caramel and warm spices. The finish is long and warm, with PX sherry, dried fruit and dark chocolate.
