A Jamaican rum-based liqueur infused with allspice berries. It is built on smoky pot-still rum and delivers flavours of clove, cinnamon, nutmeg and pepper. The liqueur is used in cocktails, punches and cooking, including marinades, curries and jerk glazes. It is rich, warming and aromatic, with a syrupy mouthfeel and brown-sugar sweetness balanced by drying spice. A small amount adds depth to drinks and dishes.
