Carl T. Huber's Double Oaked is an Indiana straight bourbon from Starlight Distillery, bottled at 53% in a 75cl bottle. It is made by blending two mashbills, one of 60% corn, 20% rye and 20% malted barley, the other of 51% corn, 20% rye, 20% malted barley and 9% wheat.
After maturing in charred new oak, the bourbon spent a further eight months in Seguin Moreau Vanilla Toast barrels, a design made for bourbon finishing.
The nose has caramel, toffee, toasted oak, vanilla cream and a little tobacco. The palate brings butterscotch, salted caramel, red fruit and roasted corn. The finish is long and warm, with caramel and drying oak.
