Starlight Carl T. Huber's is a single barrel bourbon finished in Caribbean rum casks, bottled at 51.5% ABV in a 750ml bottle. It was produced at Starlight Distillery in Borden, Indiana, which distils on copper pot stills and uses sweet mash fermentation.
After its first maturation, selected barrels move into used rum casks from Foursquare in Barbados and Worthy Park in Jamaica. The bourbon is made from two mashbills: a three-grain recipe of corn, rye and malted barley, and a four-grain recipe that adds wheat.
Toasted oak, vanilla, ripe banana and dried mango mark the nose. Caramel, toffee, orange peel and dried red fruit follow on the palate, and the long finish turns slightly drying, with vanilla and molasses.
