Carl T. Huber's Honey Finish is a cask-strength bourbon from Starlight Distillery, bottled at 113.7 proof (56.85% ABV) in a 75cl bottle. It starts with the distillery's Carl T. Huber straight bourbon, which is finished in barrels that previously held locally sourced honey.
The honey is set against heavy barrel char and baking spices in the uncut whiskey. It is a limited release.
The nose is dark caramel, honey blossom, toasted oak and cinnamon. The palate is thick and full-bodied, with toffee, vanilla cream and syrupy honey, plus a wave of baking spice. The finish is very long, with honey, dark chocolate and spicy oak.
