Starward – Solera Single Malt Whisky (70cl, 43%)

Starward Solera is an Australian single malt made in Melbourne, in a 70cl bottle at 43% ABV. It is matured in Apera casks, the Australian counterpart to sherry, from local wineries. A solera process is used, in which newer spirit is continually married with older whisky, so each batch is linked to the one before it. The nose offers dried fruit, caramel and toasted nuts. On the palate come honey, raisins, oak spice and gentle malt sweetness, with dried fig and dark chocolate. The finish is long, warm and silky, with sherry richness and subtle spice.
