Stauning – R.Y.E. PX Sherry Cask Finish (70cl, 46%)

Stauning R.Y.E. PX is a Danish rye whisky made from locally grown rye and barley and bottled at 46%. It matures first in new American oak on site, then spends an extended period in Pedro Ximénez sherry casks. The grain is floor-malted and kiln-dried at the distillery, and the spirit is distilled twice in small, direct-fired copper stills. The sherry casks add dark fruit and a velvety sweetness without covering the rye spice. It is non-chill-filtered and has no added colour. The nose brings warm baking spices and dark dried fruit. On the palate come caramelised fig, ripe plum and toasted oak, and the finish is long, fruity and gently warming.
