Stauning – Smoke (70cl, 47%)

Stauning Smoke is a Danish single malt from the Stauning distillery on the west coast of Jutland. Its smoke comes from peat and local heather, used to dry barley malted on the distillery's own floors. It is distilled twice in small, direct-fired copper stills, then matured for five to six years in first-fill casks that held bourbon, Madeira or Jamaican rum, alongside new, heavily charred American white oak. Bottled in 2022 at 47% ABV, without chill-filtration or added colour, it may show natural sediment. The nose is gentle campfire smoke with citrus and honey. The palate shows tobacco, liquorice, walnuts and vanilla, and the finish joins fresh herbs with sweet wood smoke.
