The GlenAllachie 11 Year Old Palo Cortado Sherry Cask Matured (70cl, 48%)

This is an 11-year-old single malt from The GlenAllachie, matured in puncheons and hogsheads that previously held Palo Cortado sherry. Palo Cortado is a style that begins as a Fino and, as the flor yeast fades naturally, takes on the aromatic quality of Amontillado alongside the body of Oloroso. It is part of the Wood Collection, bottled at 48% abv in a 70cl bottle, with natural colour and without chill-filtering. Cinnamon, butterscotch and damson plum lead the nose, with heather honey and raisin butter. The palate brings toasted honeycomb, brambles, baking spices, cherries, mocha and plum jam, ending with treacle and chocolate.
