The GlenAllachie – 19 Year Old Ex-Solera Sherry Cask Matured (70cl, 50%)

This is a 19 year old single malt from The GlenAllachie, part of the Masters of Wood series selected by Master Distiller Billy Walker. It was first matured in Bourbon casks, then moved into Pedro Ximénez and Oloroso casks that had held sherry in a solera system for over 55 years. It is bottled at 50% in a 70cl bottle, with natural colour and without chill-filtration. The nose is brandied plum, mocha and honeycomb with caramel snaps, molasses tart and cocoa. The palate brings plum syrup, treacle and warmed heather honey, then black cherries, mocha and brandied orchard fruits, with crystallised cinnamon and ginger.
