Waterford – Arcadian Biodynamic Series: Luna 1.1 (70cl, 50%)

Luna 1.1 is an Irish single malt from Waterford, bottled at 50% and described as the first whisky made entirely from biodynamic barley. The barley came from three Irish farmers who work biodynamically: Trevor Harris, John McDonnell and Alan Mooney. It was released worldwide in 21,000 bottles. The whiskey matured in a mix of 35% first-fill American oak, 17% new American oak, 26% French oak and 22% casks that had held natural sweet wine. The nose is plum, apricot jam, fruit salad, iced coffee, lemon cake, milk chocolate and almonds, with herbal tea, fresh hay and a mineral note. The palate is tight and spicy, with cloves, white pepper, dark chocolate, liquorice, grapefruit, green pepper and peppermint tea. The finish is delicate, with lingering spice and a slight acidity.
